The advantage of using protective cultures is the capability to inhibit the growth of harmful bacteria. Among these harmful bacteria belong for example naturally occurring lactic acid bacteria which form acetic acid or gases like Leuconostoc sp., which are often responsible for an unpleasant taste. Also the growth of some pathogenic bacteria such as Listeria monocytogenes can be suppressed by protective cultures.
